Rainbow Salad

Healthy eating doesn't have to be complicated, delicious and nutritious foods can be easy. My inspiration this week is the seven main chakras. Chakras are wheels of energy within the body and that the seven main chakras form a vertical column along the torso. Keeping the chakras open and balanced allows energy to flow freely and appropriately through the body maintaining our physical, emotional, and psychological health. Each of our seven chakras has a corresponding color that follows the colors of the rainbow: red, orange, yellow, green, blue, indigo, and violet.After a long weekend of Teacher Training sharing the importance of the chakras with my students... We’re eating rainbow colors!!Enjoy!whatthechakraINGREDIENTS:1/2 raw medium beet, trimmed1 orange bell pepper, chopped1 large yellow carrot, scrubbed and trimmed1/4 cup pecans, roughly bashed1 handful fresh mint, chopped1/2 pineapple - peeled and cubed1 avocados - peeled, pitted, and cubed2 vine-ripe tomatoes, diced3 handful of green salad (spinach, lettuce, arugula), chopped2 mini cucumbers2 thinly sliced green onions FOR THE DRESSING:You can be very creative  and add any dressing of your choice. I like it simple.1 tablespoon extra-virgin olive oilSea salt and ground pepperlemon juice DIRECTIONS:Place the tomato, pineapple, avocado, bell pepper, carrot, beet, pecans, green onion, green salad and mint into a large bowl. Pour the dressing. Stir gently until evenly combined. Serve immediately for the freshest taste.
