Apple Vegan Cake
The more I learned about veganism, the more I realized just how damaging the meat and dairy industry is to the environment and, of course, the animals. For that reason I made few changes on this delicious brazilian family recipe " Bolo de Nozes da Familia Calapes".It is sweet, moist and fluffy... yummy!!! Ingredients:
- 6-7 peeled and chopped apples into little chunks
- 1 Tablespoon cinnamon
- 3 cups whole wheat pastry flour, sifted
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 3/4 cup vegetable oil or coconut oil (more expensive, but more tasty)
- 1 cup demerara sugar (turbinado sugar)
- 1/4 cup water or almond, coconut and soy milk
- 2 1/2 teaspoons vanilla
- 1/3 chopped pecans
- 1/3 raisins
Preparation:
- Peel and chop apples into little chunks. Pour them into a medium-sized bowl and toss with cinnamon and sugar, then set aside.
- Stir the flour, baking powder and salt in a large mixing bowl. In a separate bowl, combine the oil, orange juice, sugar and vanilla. When they’re prepared, add the water, stir well to combine. Add the apples, cinnamon and sugar and mix well.
- Grease a cake pan and pour the batter in. Bake for about 1 hour and 30 minutes, or until a toothpick inserted comes out clean (preheat the oven to 300°F). Cool completely before removing from the pan and serving.
Tips:You can cover with any vegan topping: dark chocolate, frosting, or fruits.
