"Zuna" Vegan Tuna Salad
We gave this cute name, "Zuna" to our Vegan Tuna Salad!!! It is easy (healthy) delicious recipe!!!ENJOY! Ingredients:1 1/2 cups cooked chickpeas (a 15 oz can rinsed and drained)1/4 cup vegan mayonnaise1 medium carrot, peeled and very finely chopped1 stalk celery, finely chopped2 tablespoons sliced scallions, from about two scallions1/4 chopped pickles2 tablespoons of organic Dulse Granules3 tablespoons fresh lemon juiceSalt and pepper to tasteDirections:Place chickpeas in the bowl of a food processor and pulse two or three times to roughly chop. A few whole ones left are ok.Mix in the mayo and give a few more mashes. Mix in the carrot, celery, pickles, dill relish, lemon juice and scallions. Add salt and pepper to taste. Assemble into sandwiches, toasted or not, and serve sliced in half.***Goes with salad. Stuffed inside a raw or roasted bell pepper. As a dip. Inside pita pockets or a wrap. As a sandwich on toasted bread. With crackers as a power-fuel snack!
