Warm Lentil Salad

Lentils are cheap, easy, high in protein, vegetarian, and vegan-friendly!!! Thi is a great vegan salad to make any time of the year. Lentils can be a bit too bland for some people’s palates, but they’re wonderful at absorbing other flavors. So combined with aromatic vegetables and herbs they’re a revelation.

INGREDIENTS

tablespoons olive oil1 small leek, chopped4 thinly sliced green onions1 medium sweet potato, peeled and cut into 1/4-inch pieces2 1/2 cups of water1 1/4 cups green lentils, rinsed (1/2 pound)kosher salt and smoked paprika1 small bunch kale,  leaves torn into bite-size pieces (about 3 cups)

DIRECTIONS

Heat 1 tablespoon of the oil in a large saucepan over medium heat. Add the leeks and green onions and cook, stirring occasionally, until soft, 3 to 4 minutes.Add  sweet potato and cook, stirring, for 1 minute.Add the water and lentils and simmer, covered, until the lentils are tender, 20 to 25 minutes. Season with ½ teaspoon each salt and smoked paprika.Remove the pot from heat add kale and cover. After 10 min mix and serve it.
